Kleine mosselen met veel smaak. Moules de bouchot (hangmosselen) zijn wat kleinere mosselen, die gekweekt worden op palen in zee. De mosselen voeden zich ook met algen waardoor zij qua smaak wat uitgesproken en ongelooflijk lekker zijn. Je herkent ze behalve aan hun kleinere formaat, ook aan de blauwe gloed van hun schelp en het geeloranje vlees. Bestellen bij de visboer. Moules de bouchot zijn meestal niet standaard op voorraad bij Nederlandse viswinkels, maar de beste kans heb je in het vroege najaar. Ik bestel ze altijd vooraf bij mijn visboer. Twee kilo is genoeg voor 4 personen; maar heb je grote eters of tieners aan tafel, bestel dan wat extra. Mocht er nog wat over zijn, dan heb je een heerlijke bouillon met mosselen voor de volgende dag! ... Ingrediënten. ... 20 cl crème fraîche (uit Normandië, évidemment!) ... Bereidingswijze. – Verwarm de oven op 200 graden. – Spoel de moules af onder stromend water en haal de baard eraf. – Leg de verse frieten op het vel bakpapier op de ovenschaal en besprenkel met een beetje olijfolie en zout. – Bak de frieten 10 minuten in de oven en draai ze dan om. Bak ze nog 10 minuten. Wil je ze wat bruiner, dan kun je op het laatst de grill nog even aanzetten. – Verwarm de boter in de pan. Bak de sjalotjes in 2-3 minuten om en om. – Voeg de mosselen toe en als het weer begint te koken, voeg de wijn toe. – Hussel de pan en als het weer begint te koken, opnieuw husselen. – Voeg dan de crème fraîche toe en de peterselie. – Meng goed alles door elkaar, draai het vuur uit en zet de deksel op de pan. Alle mosselen moeten open zijn; zet anders het vuur nog een minuut aan. – Haal ondertussen de frieten uit de oven en dresseer ze in een schaal. – Maal wat verse peper boven de mosselen en strooi extra peterselie voor de decoratie. – Geen zin in friet? Je kunt ze ook vervangen door vers stokbrood, daarmee kun je ook lekker soppen in het kookvocht dat overblijft. À table!! ...
